2019-11-232019-11-232006-09-012469-0732http://hdl.handle.net/2133/17150El presente trabajo deriva de un ejercicio de investigación mayor sobre la cocina, las cocineras, las recetas y recetarios argentinos en la intersección de los siglos XIX y XX. Dicha investigación fue buscando puntos de focalización hasta quedar anclada en la experiencia de las cocineras en ámbitos rurales del sur de la provincia de Santa Fe durante la primera mitad del siglo XX. Al expresar “sur de la provincia” aludimos sobre una territorialidad con fronteras permeables y móviles en permanente diálogo con realidades mayores. Así, las cocineras seleccionadas fueron testigos de los sabores y recetas oscilantes entre lo micro, fruto del terruño y de la memoria familiar - local; y lo macro, caracterizado por las costumbres, tradiciones y modas practicadas en el ambiente nacional e internacional. El desafío consiste en interpretar la textura de la experiencia de las mujeres cocineras que además de cocinar para los propios, muchas veces, lo hicieron para otros, como empleadas del servicio doméstico.The present paper derives from an exercise of major research about cooking, cooking women, recipes and argentine recipe books on the intersection between nineteenth and twentieth century. Such investigation has been looking for focus points until it became anchored on cooker women´s experience within country spaces in the South of the Province of Santa Fe during the first decades of the Twentieth Century. By using the words “South of the Province…”, we allude to a territoriality with permeable and mobile borders in permanent dialogue with higher realities. So, selected cooker women witnessed tastes and recipes which oscillated between the `micro´, outcome of the homeland and family-local memory; and the `macro´, characterized by manners, traditions and fashions practiced in national and international environments.
